
Chicken thigh looks half the price of breast. Take out the bone and the gap shrinks
At the meat counter a chicken thigh costs 13.89 zł per kilo and a breast fillet 25.49 zł. The fillet looks almost twice as expensive. Looks, because part of what you pay for in a thigh is what you don't eat.
In a bone-in, skin-on thigh, meat is roughly 70 percent of the weight. The rest is bone and skin. So a kilo of meat off thighs costs about 19.84 zł, not 13.89. The fillet has no waste, so its price stays put. An almost twofold gap turns into a gap of about 28 percent.
That 70 percent is an assumption, not a figure off the label, so we're putting it up front. A whole chicken carcass is about 60 percent meat and 40 percent skin and bone, and a thigh carries more meat than the bird's average. Take an optimistic 75 percent and a kilo of thigh meat comes to 18.52 zł, which widens the gap to the fillet to 38 percent. In no version is it half the price.
One thing has to be said plainly: none of this means thighs are a bad buy. In stock, in braised thighs, in a roast, the bone works for flavour and nothing is wasted. The sum only changes when you need clean meat, for a salad, for cutlets, for a pasta dish.
A correction of our own
The same number upended our recipe database. We had chicken thigh in there at 10.99 zł per kilo of meat, which was simply unreal, given a bone-in thigh costs 13.89 today. This week we checked 80 basic ingredients, fixed the prices and recalculated all 500 recipes.
The result: the median cost of a dinner portion went from 6.09 to 6.49 zł, and of an evening meal from 4.61 to 5.02 zł. Part of that is our error, not a price rise in the shop. We'd rather publish a higher number that matches at the till than a lower one that impresses.
The rule for your next shop is a single line: with bone-in meat, divide the price by how much of it you actually eat. That's the number that compares with a fillet.
